A bright and buttery cookie with fresh lemon flavor and crunchy pecans. These old-fashioned Midsummer Cookies are easy to make and perfect for sharing with family and friends.
Ingredients:
- 3/4 cup unsalted butter, softened
- 1 1/2 cups packed brown sugar
- 2 large eggs
- 1 tablespoon fresh lemon juice
- 2 tablespoons grated lemon zest
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup finely chopped pecans
Instructions:
- In a large mixing bowl, cream the softened butter and brown sugar until light and fluffy.
- Beat in the eggs, one at a time. Stir in the lemon juice, lemon zest, and vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture and mix until combined.
- Fold in the chopped pecans.
- Cover the bowl and refrigerate the dough overnight.
- Preheat the oven to 375°F. Lightly grease baking sheets or line them with parchment paper.
- Shape the dough into 1-inch balls and place them about 3 inches apart on the prepared baking sheets.
- Bake for 10–12 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer them to wire racks to cool completely.
