Meatloaf with mushrooms and cheese brings the perfect balance of savory flavor, melty cheese, and juicy texture. It’s a modern twist on a classic favorite—ideal for Sunday dinners, holidays, or meal prep.

Ingredients (Serves 6–8)

  • 1 lb ground beef
  • ½ lb ground pork
  • 1 small onion, finely diced
  • 1 cup mushrooms, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • ½ cup breadcrumbs
  • ½ cup milk
  • 1 cup shredded Swiss cheese (or mozzarella)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika (optional)
  • 1 Tbsp olive oil

Instructions

  1. Preheat oven to 375 °F (190 °C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
  2. Sauté mushrooms and onion in olive oil over medium heat for 5–7 minutes, until soft and moisture is mostly evaporated. Add garlic and cook 1 more minute. Let cool slightly.
  3. In a large bowl, combine ground beef, pork, egg, breadcrumbs, milk, salt, pepper, paprika, and half the cheese. Mix gently, then fold in the sautéed vegetables.
  4. Shape the mixture into a loaf and place in the prepared pan. Top with the remaining cheese.
  5. Bake for 50–60 minutes, or until internal temperature reaches 160 °F (71 °C) and the top is golden brown and bubbling with cheese.
  6. Let rest 10 minutes before slicing.

Serving Suggestions

Serve warm with mashed potatoes, roasted vegetables, or a crisp salad. Leftovers make fantastic sandwiches!
