Meatloaf with mushrooms and cheese brings the perfect balance of savory flavor, melty cheese, and juicy texture. It’s a modern twist on a classic favorite—ideal for Sunday dinners, holidays, or meal prep.
Ingredients (Serves 6–8)
- 1 lb ground beef
- ½ lb ground pork
- 1 small onion, finely diced
- 1 cup mushrooms, finely chopped
- 2 cloves garlic, minced
- 1 large egg
- ½ cup breadcrumbs
- ½ cup milk
- 1 cup shredded Swiss cheese (or mozzarella)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika (optional)
- 1 Tbsp olive oil
Instructions
- Preheat oven to 375 °F (190 °C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
- Sauté mushrooms and onion in olive oil over medium heat for 5–7 minutes, until soft and moisture is mostly evaporated. Add garlic and cook 1 more minute. Let cool slightly.
- In a large bowl, combine ground beef, pork, egg, breadcrumbs, milk, salt, pepper, paprika, and half the cheese. Mix gently, then fold in the sautéed vegetables.
- Shape the mixture into a loaf and place in the prepared pan. Top with the remaining cheese.
- Bake for 50–60 minutes, or until internal temperature reaches 160 °F (71 °C) and the top is golden brown and bubbling with cheese.
- Let rest 10 minutes before slicing.
