Meat Loaf with Mushroom Stuffing is not only a comforting and hearty meal but also an excellent choice for a holiday feast like Thanksgiving.
Ingredients:
- 8 oz (225g) mushrooms, coarsely chopped
- 1 small onion, finely chopped
- 1 oz (30g) butter
- 4 1/2 oz (130g) fresh breadcrumbs
- 3 tablespoons chopped fresh parsley
- 1 teaspoon dried thyme
- 2 teaspoons bottled brown sauce
- Salt and pepper
- 1 1/2 lb (700g) lean minced beef
- 8 oz (225g) lean minced pork
- 5 tablespoons tomato ketchup
- 2 eggs, beaten
Instructions:
- Preheat the oven to 375°F (190°C) / Gas Mark 5.
- Cook the mushrooms and onion in the butter over moderate heat until soft. Turn the mixture into a bowl.
- Add the breadcrumbs, parsley, thyme, brown sauce, salt, and pepper. Mix well.
- In another bowl, combine the beef with the pork, tomato ketchup, and eggs.
- Pack half of the meat mixture into a large loaf tin, pressing it into an even layer. Pack the mushroom mixture on top, then cover with the rest of the meat. Bake for 1 1/4 hours.
- Remove from the oven and let it stand for 15 minutes. Pour off the juices, then turn the meatloaf onto a serving plate. Serve hot.
