May Cake, also known as Strawberry Cake, is a light and refreshing dessert perfect for any spring or summer occasion. With its soft sponge cake base topped with a rich strawberry cream, this cake is a delicious way to celebrate the season.
Ingredients:
Cake:
- 4 large eggs
- 2 egg yolks
- Zest of 1 lemon
- 3/4 cup sugar
- 3/4 cup + 2 tablespoons all-purpose flour
- 4 tablespoons unsalted butter (melted)
Cream:
- 1 cup heavy cream
- 3 tablespoons sugar
- 1/2 cup pureed strawberries
Instructions:
- In a bowl, whisk together the eggs, egg yolks, lemon zest, and sugar. Cook this mixture over low heat, stirring constantly until it thickens. Once thickened, remove it from the heat and continue to mix until it cools down.
- Add the flour and melted butter to the cooled mixture and stir until combined.
- Pour the batter into a greased and floured pan and bake at 325°F (165°C) for about 20-25 minutes, or until the cake is golden brown and a toothpick inserted comes out clean.
- In a mixing bowl, combine the heavy cream and sugar. Whip until soft peaks form. Add the pureed strawberries and mix until fully incorporated.
- Once the cake has cooled, spread the strawberry cream on top. Decorate the cake with fresh strawberries for a beautiful presentation.
