There’s nothing quite like the magic of a molten lava cake — a dessert that’s quick, indulgent, and a little dramatic. This version is tiny but decadent, with a soft, chocolatey exterior and a gooey, melty center that oozes out when you dig in. Perfect for a last-minute treat, a romantic dessert, or a sweet solo moment.
Ingredients
1 tablespoon all-purpose flour
1–1.5 tablespoons powdered sugar
1.5 teaspoons cocoa powder
4–5 tablespoons milk (or water for vegan version)
Pinch of salt
Pinch of baking soda
1/8 teaspoon baking powder
2 teaspoons butter or neutral oil, melted
1 large chunk of cooking chocolate (about 1 oz)
Instructions
- In a small bowl, sift together the flour, powdered sugar, and cocoa powder.
- Stir in salt, baking soda, and baking powder until evenly combined.
- Add melted butter or oil and mix until smooth.
- Gradually add milk, one tablespoon at a time, stirring until you achieve a thick, smooth batter.
- Pour the batter into a microwave-safe ramekin or small bowl.
- Press the chocolate chunk into the center, ensuring it is completely covered by the batter.
- Microwave on full power for 1–2 minutes, depending on your microwave’s strength. The top should be set but the center still molten.
- Let the lava cake rest for one minute, then carefully unmold. Serve as-is or with a scoop of vanilla ice cream for an extra indulgent touch.
Baker’s Tip
For extra richness, add a few chocolate chips to the batter or sprinkle a pinch of instant coffee to enhance the chocolate flavor.
