Tender chicken cooked with colorful peppers and onions, coated in a sweet, savory, and slightly tangy honey mustard sauce, creates a simple yet incredibly satisfying dish. It’s quick, easy, and full of bold flavor.

Ingredients (Serves 2):

2 boneless, skinless chicken breasts (about ¾ to 1 pound total)

1 red bell pepper

1 yellow bell pepper

1 medium yellow onion (or green onion if preferred)

2 garlic cloves, minced

1 tablespoon olive oil

Salt and black pepper, to taste

For the sauce:

2 tablespoons honey

1 tablespoon Dijon mustard

1 tablespoon soy sauce

Instructions:

Cut the chicken into bite-sized pieces or thin strips. Slice the bell peppers and onion into thin strips. Mince the garlic.

Heat the olive oil in a large skillet over medium heat. Add the sliced peppers and onion and sauté for about 5–7 minutes, until they soften slightly but remain crisp.

Add the chicken to the skillet, season with salt and black pepper, and cook for about 5 minutes, stirring occasionally, until golden and cooked through.

While the chicken is cooking, mix the honey, Dijon mustard, and soy sauce in a small bowl until smooth.

When the chicken is fully cooked, add the minced garlic and sauté for 1 more minute. Pour in the honey mustard sauce and toss everything to coat evenly. Cook for another 1–2 minutes, just until the sauce thickens slightly.

Serve warm, garnished with fresh parsley if desired. This dish pairs wonderfully with rice, pasta, or a fresh salad.
