This is an easy way to keep whole tomatoes fresh for the winter. You only need a few ingredients, and the tomatoes will stay good for a long time.
Ingredients:
- Fresh tomatoes (choose similar-sized, healthy ones)
- Salt (about 1 teaspoon per quart of water)
- Salicylic acid (1 tablespoon per 1 gallon of water) — used as a preservative
Preparation:
Select fresh, firm tomatoes of similar size. Wash them thoroughly and place them into large glass jars (about 1-gallon jars). Bring water to a boil with a pinch of salt. Let the water cool down to room temperature, then add 1 tablespoon of salicylic acid per gallon of water. Pour this solution over the tomatoes in the jars until they are fully covered. Seal the jars tightly. Stored this way, the whole tomatoes will keep well throughout the winter and can be used fresh in salads or other dishes.
