Warm ½ cup honey, ¼ cup white sugar, ¼ cup brown sugar, 1 teaspoon cinnamon, and 2 teaspoons gingerbread spice in a small pot over very low heat. Stir just until everything melts together into a smooth, fragrant mixture. Remove the pot from the heat and immediately stir in 2 teaspoons baking soda. The mixture will puff slightly — that’s normal.

Pour the warm mixture into a mixing bowl. Add ½ cup (1 stick) unsalted butter and stir until it melts from the residual heat. Crack in 1 large egg, whisking just until the mixture comes together and looks creamy.

Begin adding 3 ½ cups all-purpose flour, a little at a time. When the dough becomes too thick to stir, turn it out onto a work surface and knead briefly until it forms a soft, smooth ball.

Wrap the dough tightly and refrigerate for about 1½ hours, so it firms up and is easy to roll.

Once chilled, dust your surface lightly with flour, roll the dough to your preferred thickness, and cut out holiday shapes. Arrange on a baking sheet lined with parchment.

Bake at 350°F (180°C) for about 7 minutes. They will look soft when they come out, but they set beautifully as they cool. Once cooled, decorate with icing, sprinkles, or melted chocolate.
