Our grandmothers used to prepare homemade sour cherry juice every summer, turning ripe, juicy cherries into a refreshing drink full of natural sweetness and health benefits. This traditional recipe is easy to make, and perfect for cooling off on warm days.
Ingredients:
2.2 pounds (1 kg) sour cherries, pitted
5 cups water
2.2 pounds (1 kg) sugar
Instructions:
Wash the cherries thoroughly and remove the stems and pits. Place the cherries in a large bowl and add the sugar. Pour the water over them and let the mixture sit for 24 hours, stirring occasionally with a clean spoon or hand.
After 24 hours, strain the mixture and cook the juice over medium heat for about 10 minutes. While still hot, pour the juice into clean, sterilized glass bottles and seal tightly.
Store in a cool, dark place. The juice will keep well throughout the year.
