Probably you’ve tried Rafaelo balls before, but this recipe takes them to the next level with a simple and creamy twist. These homemade Rafaelo balls are a delightful treat, made with vanilla pudding, coconut, and the satisfying crunch of toasted hazelnuts.
(Simple Rafaelo Balls – without powdered milk!!)
Ingredients (for approximately 100 balls):
- 2 vanilla pudding mixes
- 2 cups (500 ml) milk
- 7 tablespoons sugar
- 1 cup (250 g) margarine
- 1 cup (200 g) powdered sugar
- 3 cups (300 g) shredded coconut
- 1/2 cup (100 g) shredded coconut for rolling the balls
- 100 toasted hazelnuts
Instructions:
- Prepare the vanilla pudding with the milk according to the package instructions and let it cool.
- In a separate bowl, mix the margarine with the powdered sugar, then add the cooled pudding and mix everything well.
- Gradually add the shredded coconut, mixing until fully incorporated.
- Place the mixture in the fridge for about 1 hour to firm up (it will still be soft, but don’t worry, the balls will set firm in the end).
- After the mixture has cooled, roll it into balls, placing a hazelnut in each. Roll the balls in the shredded coconut and place them back in the fridge, uncovered, to firm up.
