Probably you’ve tried Rafaelo balls before, but this recipe takes them to the next level with a simple and creamy twist. These homemade Rafaelo balls are a delightful treat, made with vanilla pudding, coconut, and the satisfying crunch of toasted hazelnuts.

(Simple Rafaelo Balls – without powdered milk!!)

Ingredients (for approximately 100 balls):

  • 2 vanilla pudding mixes
  • 2 cups (500 ml) milk
  • 7 tablespoons sugar
  • 1 cup (250 g) margarine
  • 1 cup (200 g) powdered sugar
  • 3 cups (300 g) shredded coconut
  • 1/2 cup (100 g) shredded coconut for rolling the balls
  • 100 toasted hazelnuts

Instructions:

  1. Prepare the vanilla pudding with the milk according to the package instructions and let it cool.
  2. In a separate bowl, mix the margarine with the powdered sugar, then add the cooled pudding and mix everything well.
  3. Gradually add the shredded coconut, mixing until fully incorporated.
  4. Place the mixture in the fridge for about 1 hour to firm up (it will still be soft, but don’t worry, the balls will set firm in the end).
  5. After the mixture has cooled, roll it into balls, placing a hazelnut in each. Roll the balls in the shredded coconut and place them back in the fridge, uncovered, to firm up.
