Homemade Cheese Pie Ingredients (serves 5):
About 1 lb phyllo or pie crust sheets (approximately 10 sheets)
1 cup all-purpose flour
1 cup plain yogurt
1 cup vegetable oil
1 teaspoon baking powder
3 eggs (separated)
7 oz (200 g) cheese (crumbled or grated, preferably a mild white cheese)
Sesame seeds for sprinkling
Preparation
- Preheat the oven to 400°F (200°C).
- In a bowl, beat the 3 egg whites until stiff peaks form.
- Gently fold in the flour, oil, yogurt, and baking powder into the whipped egg whites. Mix until combined. Let the batter rest for 30 minutes.
- While the batter rests, mix the cheese with the 3 egg yolks in a separate bowl.
- Separate the crust sheets carefully. Place one sheet on a clean surface and brush it thoroughly with the batter, making sure to coat the edges well.
- Place the next crust sheet on top and repeat the brushing with the batter. Continue layering in this manner, using about one ladle of batter per sheet.
- After the last crust is layered and coated, spread the cheese and egg yolk mixture evenly on top.
- Roll the layered crust carefully into a log shape. Brush the outside with the remaining batter or a mixture of egg and oil.
- Sprinkle sesame seeds over the top.
- Bake at 400°F (200°C) for about 10 minutes, then reduce the heat to 300°F (150°C) and bake for another 20-25 minutes until golden and cooked through.
