Bring a taste of Mexico to your kitchen with these hearty homemade burritos! Filled with tender beans, seasoned meat, and a rich tomato-chili sauce, these burritos are flavorful, satisfying, and easy to prepare for any occasion.

Ingredients

  • 3 cups cooked brown beans (or pinto beans)
  • 3 garlic cloves, minced
  • 3 medium onions, chopped
  • 4 oz bacon, diced
  • 1 lb ground beef or mixed ground meat
  • 1 teaspoon salt
  • ½ teaspoon smoked paprika
  • 2 lbs ripe tomatoes, diced (or 4 cups canned crushed tomatoes)
  • 1 small hot chili pepper, finely chopped
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 6–8 medium flour tortillas (store-bought or homemade)
  • Optional: shredded cabbage or lettuce for topping

Instructions


Cook or warm the beans and set aside.


In a large skillet, heat a little oil and cook the diced bacon until slightly crispy. Add the chopped onions and garlic, sautéing until fragrant. Stir in the ground meat and cook until browned. Add the beans, salt, and smoked paprika. Let everything simmer for a few minutes to blend the flavors.


In another pot, combine the diced tomatoes and chopped chili pepper. Cook on medium heat for about 25–30 minutes, stirring occasionally, until it thickens into a rich sauce.


Warm the tortillas slightly in a pan or oven. Place a spoonful of the meat and bean mixture in the center of each tortilla, then drizzle with tomato sauce. Add a little sour cream and sprinkle cheese on top.


Roll up each burrito tightly and serve hot. Garnish with extra cheese, sour cream, or shredded lettuce if desired.
