Some of the best summer meals come from simple home kitchens where fresh ingredients and time-tested techniques create unforgettable comfort food. Whether you are pulling ripe tomatoes from the vine or picking up bell peppers at the farmers market, these two classic recipes bring authentic flavor straight to your table. From golden cheese-crusted stuffed potatoes to a fragrant chicken stew loaded with sweet peppers and herbs, this is the kind of nourishing dinner that tastes like a warm afternoon in the old country.
Recipe 1: Cheese-Stuffed Baked Potatoes
Ingredients:
- 4 large russet potatoes (about 2 pounds)
- 2 large eggs, beaten
- 1 cup fresh farmer’s cheese or well-drained ricotta
- ½ cup grated cheese (Gouda, Parmesan, or similar)
- Salt and black pepper to taste
- 2 tablespoons chopped fresh chives (optional)
Instructions:
Preheat your oven to 400°F. Scrub the potatoes and prick each one a few times with a fork. Place them directly on the oven rack with a foil-lined baking sheet underneath to catch any drips. Bake for about 45 minutes, or until tender when pierced with a knife.
Let the potatoes cool slightly until you can handle them safely. Cut each potato in half lengthwise. Scoop out the centers into a mixing bowl, leaving a sturdy shell about ¼ inch thick.
To the scooped potato flesh, add the beaten eggs, farmer’s cheese, salt, pepper, and chives. Mash and mix until well combined. Spoon the filling back into the potato shells and place them on a baking sheet. Sprinkle the grated cheese evenly over the tops.
Return to the 400°F oven and bake for about 20 minutes, until the cheese is melted and the tops are lightly golden. Serve warm.
Recipe 2: Summer Chicken Pepper Stew
Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into ½-inch cubes
- 2 medium yellow onions (about 8 ounces), diced
- 1 pound bell peppers (about 3 large), stemmed, seeded, and diced
- 1 pound ripe tomatoes (about 3 to 4 medium), peeled and diced
- 1 small hot pepper (such as jalapeño or Fresno), finely chopped
- 1 bunch fresh parsley, finely chopped
- 1 teaspoon granulated sugar
- Salt and black pepper to taste
- 3 tablespoons vegetable oil
Instructions:
Heat the oil in a large deep skillet or Dutch oven over medium heat. Add the diced onions, season with a pinch of salt, and sauté for 8 to 10 minutes until soft and translucent.
Add the cubed chicken, turn the heat to medium-high, and cook, stirring often, until the chicken is lightly browned on all sides and nearly cooked through, about 5 to 7 minutes.
Stir in the bell peppers and hot pepper. Continue cooking for another 5 to 7 minutes until the peppers begin to soften.
Add the diced tomatoes and their juices. Reduce the heat to medium-low and let everything simmer uncovered, stirring occasionally, until the liquid thickens and the vegetables are tender, about 15 to 20 minutes.
Season with the sugar, salt to taste, and a generous amount of black pepper. Remove from heat and stir in the chopped parsley.
Serve hot with boiled potatoes, buttered egg noodles, or a slice of warm crusty bread.
