Ingredients

  • 1 lb top round steak, cut into thick steaks
  • 2 large onions, cut into rings
  • 1 cup tomato juice
  • 1 tbsp olive oil
  • 1 clove garlic, finely chopped
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp freshly ground black pepper
  • Optional: steamed green beans

Instructions

  1. Create Herb Marinade: Whisk together tomato juice, olive oil, garlic, oregano, basil, and black pepper in a bowl.
  2. Infuse the Steak: Place steaks in a plastic bag and pour in the marinade. Seal the bag and gently move the steak around to coat. Refrigerate overnight to let the flavors penetrate.
  3. Prep the Onions: Lay onion rings on a large square of heavy-duty foil. Drizzle about half of the reserved marinade over the onions, then fold foil into a tight packet.
  4. Grill Time: Preheat your grill to medium. Place the steak and onion packet on the grill. Cook for 10 minutes, then turn both the steak and packet. Brush steak lightly with marinade. Continue grilling 8–10 minutes or until steak reaches your desired doneness and onions are soft and caramelized.
  5. Plate and Serve: Open the onion packet and place the rings on a serving platter. Lay the grilled steaks on top and spoon any onion juices over the meat. Add green beans on the side for a complete meal.
