Ingredients (12 muffins):
- 2 large eggs
- 1/3 cup maple syrup
- 1/3 cup melted coconut oil
- 1 cup shredded zucchini
- 1/2 cup grated apple
- 1 cup whole-wheat pastry flour
- 1/2 cup oat flour
- 1 tbsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/4 cup chopped walnuts or pecans (optional)
Instructions:
- Preheat oven to 375°F. Grease a 12-cup muffin tin or line with paper liners.
- In a medium bowl, whisk eggs with maple syrup and coconut oil until smooth.
