A classic homemade cake, Grandma’s Cake is rich, soft, and filled with a creamy chocolate and walnut filling. Simple yet delicious, it’s perfect for special occasions or as a nostalgic treat.
Ingredients:
For the Cake Layers:
- 7 egg whites
- 14 tablespoons (about 1 cup) all-purpose flour
- 1 teaspoon baking powder
- 7 egg yolks
- 14 tablespoons (about ⅞ cup) sugar
For the Filling:
- 1 cup (2 sticks / 8 oz) margarine or butter
- 4 eggs
- 1 ¼ cups (250g) sugar
- 5.3 oz (150g) dark chocolate
- 10.5 oz (300g) finely ground walnuts
Instructions:
- Prepare the Cake Layers:
- Preheat the oven to 350°F (175°C). Grease and line a baking pan with parchment paper.
- In one bowl, beat egg whites until stiff peaks form.
- In another bowl, beat egg yolks with sugar until light and creamy.
- Gently fold in flour and baking powder, then mix in the beaten egg whites.
- Pour the batter into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool, then slice into three layers.
- Prepare the Filling:
- In a saucepan over low heat, melt margarine (or butter).
- Stir in eggs, sugar, and chocolate, continuously mixing until smooth.
- Once the mixture is combined, add the ground walnuts and stir well.
- Remove from heat and let cool slightly.
- Assemble the Cake:
- Spread the filling evenly between the cake layers.
- Cover the top and sides with the remaining filling.
- Sprinkle with additional ground walnuts for decoration.
- Let the cake sit in a cool place for a few hours before serving.
