Chicken Croquettes

Ingredients
- 1 pound chicken breast (white meat)
- ⅓ cup cooked rice
- 2 large eggs
- 1 small leek, finely chopped
- 2 tablespoons all-purpose flour
- 1 teaspoon baking powder
- Salt and pepper, to taste
- All-purpose seasoning or spice blend, to taste
For Frying
- ½ cup all-purpose flour (for dredging)
- 2 large eggs, beaten
- 1 cup breadcrumbs
- Vegetable oil, for frying
Chop the chicken into chunks and grind it in a food processor or meat grinder. Add the chopped leek and mix well. Stir in the cooked rice, eggs, pepper, salt, and your preferred seasoning. Mix again to combine thoroughly. Add the flour and baking powder to the mixture and stir until you get a uniform texture.
Shape the mixture into small balls, flatten them slightly between your palms, and coat each one by dredging in flour, dipping in beaten eggs, then rolling in breadcrumbs.
