Ingredients:
- 4 turkey breast fillets
- ¾ cup all-purpose flour
- 2 large eggs
- 1 ½ cups breadcrumbs
- 1 tsp salt
- ½ tsp black pepper
- ⅓ cup vegetable oil
- 8 slices ham
- 8 slices semi-hard cheese
Instructions:
- Slice the turkey breasts into medallions. Season with salt and pepper.
- Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
- Dredge each medallion first in flour, then in egg, and finally coat with breadcrumbs, pressing gently to adhere.
- Heat the oil in a large skillet over medium-high heat. Fry the medallions for 3–4 minutes per side until golden brown. Transfer to a paper towel to drain excess oil.
- Preheat the oven to 400°F (200°C). Place the fried medallions on a parchment-lined baking sheet. Top each with a slice of ham and cheese.
- Bake for 5–7 minutes until the cheese is melted and bubbly. Serve immediately.
