Tender turkey medallions coated in a crispy golden crust, topped with savory ham and melted cheese. Perfect for a quick weeknight dinner or a festive family meal, these baked delights are juicy, flavorful, and irresistible.

Ingredients:

  • 4 turkey breast fillets
  • ¾ cup all-purpose flour
  • 2 large eggs
  • 1 ½ cups breadcrumbs
  • 1 tsp salt
  • ½ tsp black pepper
  • ⅓ cup vegetable oil
  • 8 slices ham
  • 8 slices semi-hard cheese

Instructions:

  1. Slice the turkey breasts into medallions. Season with salt and pepper.
  2. Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
  3. Dredge each medallion first in flour, then in egg, and finally coat with breadcrumbs, pressing gently to adhere.
  4. Heat the oil in a large skillet over medium-high heat. Fry the medallions for 3–4 minutes per side until golden brown. Transfer to a paper towel to drain excess oil.
  5. Preheat the oven to 400°F (200°C). Place the fried medallions on a parchment-lined baking sheet. Top each with a slice of ham and cheese.
  6. Bake for 5–7 minutes until the cheese is melted and bubbly. Serve immediately.
