When you want to try something different, these fried mushroom croquettes deliver rich, savory flavor with a crispy golden crust. A simple, satisfying bite that works as an appetizer, snack, or light meal.

Ingredients:

  • 1½ lbs fresh white mushrooms (champignons)
  • 1 medium yellow onion, finely chopped
  • 1 tablespoon all-purpose flour
  • ½ cup sour cream
  • 2 eggs
  • ⅓ cup milk
  • 1 cup breadcrumbs, plus more for coating
  • Salt & freshly ground black pepper, to taste
  • Chopped fresh parsley, to taste
  • Vegetable oil, for frying

Instructions:

Clean and slice the mushrooms, then pour boiling salted water over them and drain well. In a skillet, heat some oil and sauté the mushrooms together with the finely chopped onion until the moisture evaporates. Sprinkle in the flour, stir to combine, then add salt, freshly ground black pepper, and sour cream. Let the mixture simmer briefly, then remove from heat and allow it to cool.

Once cooled, add the eggs, chopped parsley, milk, and breadcrumbs. Mix everything thoroughly until well combined, and let the mixture rest for about 25 minutes.

Using your hands, shape the mixture into small croquettes, roll them in breadcrumbs, and fry in hot oil until golden brown and crispy on all sides.

Serve warm with dipping sauces, a fresh salad, or steamed vegetables.
