The flavors of the Mediterranean are always a treat for the palate. This dish features fried tomatoes that pair perfectly with potatoes, enhanced by a sauce made with red onion, garlic, and a splash of lemon juice—a truly delightful combination.

Main Ingredients:

  • 2 medium-sized tomatoes, peeled and sliced into medium-thick rounds
  • 1 small onion, sliced into rings
  • 2 cloves garlic, sliced into thin rounds
  • 1 teaspoon whole grain Dijon mustard
  • 1 medium potato, sliced into thin rounds
  • A few drops of lemon juice
  • A pinch of chopped fresh parsley
  • A pinch of basil
  • Olive oil
  • Salt and pepper to taste

Preparation:

  1. Place the tomato slices on a lightly oiled grill pan, sprinkle with basil and a little olive oil, and cook over low heat until roasted.
  2. Meanwhile, cook the potato slices in a pot of salted water.
  3. Once the tomatoes are cooked, transfer them to a heat-retaining baking dish.
  4. In the same pan where the tomatoes were cooked, sauté the mustard, onion, and garlic briefly. Drizzle with lemon juice, add salt and pepper, and let the flavors blend.
  5. On a plate, layer the potatoes first, followed by the tomatoes, then the onion rings, parsley, and a drizzle of olive oil. Add some of the garlic and sauce around the dish.

Note:

Serve with toasted bread brushed with olive oil and sprinkled with parsley.
