The flavors of the Mediterranean are always a treat for the palate. This dish features fried tomatoes that pair perfectly with potatoes, enhanced by a sauce made with red onion, garlic, and a splash of lemon juice—a truly delightful combination.
Main Ingredients:
- 2 medium-sized tomatoes, peeled and sliced into medium-thick rounds
- 1 small onion, sliced into rings
- 2 cloves garlic, sliced into thin rounds
- 1 teaspoon whole grain Dijon mustard
- 1 medium potato, sliced into thin rounds
- A few drops of lemon juice
- A pinch of chopped fresh parsley
- A pinch of basil
- Olive oil
- Salt and pepper to taste
Preparation:
- Place the tomato slices on a lightly oiled grill pan, sprinkle with basil and a little olive oil, and cook over low heat until roasted.
- Meanwhile, cook the potato slices in a pot of salted water.
- Once the tomatoes are cooked, transfer them to a heat-retaining baking dish.
- In the same pan where the tomatoes were cooked, sauté the mustard, onion, and garlic briefly. Drizzle with lemon juice, add salt and pepper, and let the flavors blend.
- On a plate, layer the potatoes first, followed by the tomatoes, then the onion rings, parsley, and a drizzle of olive oil. Add some of the garlic and sauce around the dish.

Serve with toasted bread brushed with olive oil and sprinkled with parsley.
