When you want a cozy, fragrant apple cake, this recipe from Gordon Ramsay delivers with wholesome ingredients and warm spices.
Ingredients:
- 6 large apples (about 2.2 lbs) for the apple puree
- 3.5 tbsp sugar
- 2 tbsp butter
- 2 tart apples
- Juice of 1 lemon
- 1 3/4 cups whole wheat flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup brown sugar
- 1 tsp cinnamon
- 1 tsp ground ginger
- 1/2 tsp nutmeg
- 1/2 tsp ground cloves
- 1 large egg
- 3 1/2 tbsp olive oil
- 2 tbsp apricot jam
- 2 tbsp water
Instructions:
- Peel, core, and chop 6 large apples. Place them in a saucepan with sugar and butter. Cook over medium-high heat for 10–15 minutes until the apples are soft and the liquid reduces. Mash the apples into a puree and set aside to cool.
- Preheat your oven to 350°F. Grease and flour a 9.5-inch (24 cm) cake pan.
- For decoration, peel the 2 tart apples, core, and thinly slice them. Toss the slices with lemon juice and a little water to prevent browning.
- In a large bowl, mix the whole wheat flour, baking powder, baking soda, salt, and spices.
- Make a well in the center and add the olive oil, egg, and cooled apple puree. Stir until combined, then pour the batter into the prepared pan.
- Bake for 30 minutes, until the center feels firm.
- Remove the cake from the oven and quickly arrange the apple slices on top, leaving a small border uncovered. Brush the slices with a bit of lemon juice and bake for another 30 minutes.
- Let the cake cool slightly before removing from the pan.
- Warm the apricot jam with water and brush it over the top of the cake for a glossy finish.
