Soft, oven-baked fish coated in a smooth lemon-ginger glaze – a fresh, light dinner full of flavor and ready in under 30 minutes.

Ingredients:

4 fillets of white fish (hake, cod, or tilapia)

1 small onion, thinly sliced

Juice of half a lemon

1 tablespoon olive oil

A pinch of sea salt

Freshly ground pepper

For the sauce:

1-inch fresh ginger root, grated

1 garlic clove, finely chopped

1 tablespoon butter or coconut oil

1/2 cup light vegetable broth

1/3 cup plain yogurt or light cream

1 teaspoon maple syrup or agave (optional, for a gentle sweetness)

Pinch of salt and pepper

Preparation:

Rinse the fish, pat it dry, and season with salt and pepper.
Place it in a small baking dish lined with parchment paper. Add onion slices and drizzle with olive oil and lemon juice.
Cover loosely with foil and bake in a preheated oven at 375°F (190°C) for 25 minutes, until soft and flaky.


While the fish bakes, melt the butter in a small pan. Add garlic and ginger and stir for about a minute until the aroma opens up.
Pour in the broth, lower the heat, and let it simmer for 5 minutes. Stir in yogurt (or cream) and maple syrup, season lightly, and cook just until smooth and creamy.


Place the baked fish on a warm plate and spoon the lemon-ginger glaze on top.
Serve hot with rice, quinoa, or lightly steamed greens.
