Ingredients:
- 1 cup all-purpose flour
- ⅓ cup cornstarch
- 1 tsp cinnamon
- 1 tsp rum
- 1 ½ tsp baking powder
- ⅔ cup dried prunes, chopped
- 1 cup dried figs, chopped
- ½ cup dried apricots, chopped
- 1/2 cup chopped walnuts
- ⅓ cup almonds
- Zest of 1 lemon
- 3 eggs
- 1 cup sugar
- 1 tbsp vanilla sugar
- 1 cup powdered sugar
Instructions:
- Preheat your oven to 350°F (180°C) and line a loaf pan with parchment paper.
- In a large bowl, whisk the egg whites until stiff peaks form. Gradually add sugar and vanilla sugar, continuing to beat until the mixture is smooth and glossy. Set aside.
- In another bowl, combine flour, cornstarch, baking powder, and cinnamon. Gradually add this dry mixture to the egg whites, folding carefully to avoid deflating the mixture.
- Stir in the rum, dried fruits, nuts, and lemon zest. Mix gently to incorporate everything evenly.
- Pour the batter into the prepared loaf pan. Smooth the top and bake for about 1 hour or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
