A true holiday delight, this Christmas sweet bread is a must-have for festive celebrations. Ingredients:

  • 1 cup all-purpose flour
  • ⅓ cup cornstarch
  • 1 tsp cinnamon
  • 1 tsp rum
  • 1 ½ tsp baking powder
  • ⅔ cup dried prunes, chopped
  • 1 cup dried figs, chopped
  • ½ cup dried apricots, chopped
  • 1/2 cup chopped walnuts
  • ⅓ cup almonds
  • Zest of 1 lemon
  • 3 eggs
  • 1 cup sugar
  • 1 tbsp vanilla sugar
  • 1 cup powdered sugar

Instructions:

  1. Preheat your oven to 350°F (180°C) and line a loaf pan with parchment paper.
  2. In a large bowl, whisk the egg whites until stiff peaks form. Gradually add sugar and vanilla sugar, continuing to beat until the mixture is smooth and glossy. Set aside.
  3. In another bowl, combine flour, cornstarch, baking powder, and cinnamon. Gradually add this dry mixture to the egg whites, folding carefully to avoid deflating the mixture.
  4. Stir in the rum, dried fruits, nuts, and lemon zest. Mix gently to incorporate everything evenly.
  5. Pour the batter into the prepared loaf pan. Smooth the top and bake for about 1 hour or until a toothpick inserted into the center comes out clean.
  6. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
