Ingredients (for 3 layers):
Cake:
- 12 large egg whites
- 12 tbsp sugar
- 12 tbsp all-purpose flour
- 3 tbsp ground walnuts
Yellow Filling:
- 12 large egg yolks
- 3 1/3 cups milk
- 10 tbsp sugar
- 9 tbsp cornstarch
- 3.5 oz butter or margarine
- 3.5 oz white chocolate
White Filling:
- 1 1/4 cups heavy cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 3 tbsp sour cream
- 3.5 oz roasted ground hazelnuts
Chocolate Topping:
- 7 oz dark chocolate
- 2 tbsp sugar
Preparation:
Preheat oven to 350°F.
Beat egg whites until soft peaks form, then gradually add 4 tbsp sugar until stiff.
Gently fold in 4 tbsp flour and 1 tbsp ground walnuts.
Pour into a greased round cake pan and bake until lightly golden.
Repeat two more times to make three layers.
Make the yellow filling:
Whisk egg yolks with sugar and cornstarch until smooth.
Gradually stir in milk and cook over medium heat, stirring constantly, until thickened.
Remove from heat, then stir in butter and melted white chocolate until fully incorporated.
Let cool to room temperature.
Prepare the white filling:
Whip heavy cream with powdered sugar, vanilla, and sour cream until soft peaks form.
Fold in roasted ground hazelnuts gently to keep it light and airy.
Place the first cake layer on a serving plate. Spread a layer of yellow filling, followed by a layer of white filling.
Repeat with remaining layers, ending with white filling on top.
Decorate:
Melt dark chocolate with sugar and drizzle or spread on top.
Chill for a few hours before serving to let flavors meld.
