White Chocolate Cherry Cheesecake Truffles

Cheesecake Mixture

  • 14 oz cream cheese, softened
  • 1½ cups finely crushed vanilla cookies
  • ⅓ cup powdered sugar
  • ½ cup frozen sour cherries (pitted)

White Chocolate Coating

  • 7 oz white chocolate, chopped
  • 2 tablespoons neutral oil (or coconut oil)
  • ½ cup finely crushed vanilla cookies (for rolling)

Instructions

  1. In a bowl, mix cream cheese, crushed cookies, and powdered sugar until smooth.
  2. Scoop about 1 tablespoon of mixture, flatten slightly, place a frozen cherry in the center, and roll into a ball.
  3. Place balls on a tray and freeze for 20–30 minutes.
  4. Melt white chocolate with oil until smooth.
  5. Dip each ball into the chocolate, place on parchment paper, and immediately roll in crushed cookies.
  6. Let set completely before serving.

Velvet Coconut Cream Rolls

Ingredients

Chocolate Layer

  • ¾ cup granulated sugar
  • ½ cup fine semolina
  • ⅓ cup all-purpose flour

  • 3½ tablespoons butter or margarine

Other

  • 2 cups shredded coconut
  • 1 cup heavy whipping cream, whipped

Instructions

  1. Sprinkle shredded coconut evenly over a large baking sheet (about 14 × 14 inches).
  2. In a saucepan, heat milk until warm. Whisk in sugar, semolina, flour, and cocoa.
  3. Cook over medium heat, stirring constantly, until thick. Add butter and stir until melted.
  4. While warm, spread the mixture evenly over the coconut layer.
  5. Chill until fully set, then spread whipped cream evenly on top.
  6. Cut into strips about 2 × 6 inches and gently roll each strip into a spiral.

Vanilla Banana Biscuit Squares

Ingredients:

  • 4 cups whole milk
  • 3 (3.4 oz) packages vanilla pudding mix
  • 1 cup granulated sugar
  • 7 tbsp butter or margarine
  • 1 cup powdered sugar
  • 2 cups heavy whipping cream
  • 2 (7 oz) packages plain tea biscuits or petit beurre cookies
  • 3 ripe bananas
  • 3.5 oz milk chocolate
  • 1/3 cup milk

Instructions:
Prepare pudding with milk and sugar according to package directions. While hot, stir in butter and powdered sugar until smooth. Cover and let cool completely. Whip cream until soft peaks form, then gently fold into the cooled pudding.

In a 9 × 13 inch pan, arrange a layer of biscuits. Spread part of the cream over the biscuits, add sliced bananas, then repeat layers. Finish with cream. Melt chocolate with milk and drizzle over the top. Chill for several hours or overnight, then cut into neat squares.

Coconut Custard Slice

Ingredients:

  • 10.5 oz ground tea biscuits
  • 3 tbsp apricot jam
  • ¾ cup milk
  • 1 cup granulated sugar
  • 1 tsp vanilla sugar or extract
  • ¾ cup fine semolina
  • 7 tbsp butter
  • 3.5 oz dark chocolate
  • ¼ cup milk

Instructions:
Mix ground biscuits, jam, and milk to form a soft base. Press evenly into a parchment-lined 9 × 13 inch pan.

In a saucepan, heat milk, sugar, vanilla, and semolina, stirring constantly until thick. Remove from heat and mix in butter. Spread warm custard over the base and let cool completely.

Melt chocolate with milk and pour over the top. Chill until firm, then slice and serve.

Fig & Walnut Chocolate Truffles

Ingredients:

  • 1 cup dried figs
  • ½ cup granulated sugar
  • ½ cup ground walnuts
  • 5 tbsp butter
  • 2.5 oz dark chocolate
  • Shredded coconut, for rolling

Instructions:
Soak figs in hot water until soft, then drain and finely chop. Cook sugar with a little water until dissolved, add figs, and simmer briefly. Remove from heat and stir in butter, walnuts, and melted chocolate.

Let mixture cool slightly, then shape into small balls. Roll in shredded coconut. Chill until firm, then serve.

Classic Chocolate Biscuit Roll

Ingredients:

  • 3 cups crushed tea biscuits
  • ¾ cup chopped walnuts or hazelnuts
  • ¾ cup powdered sugar
  • 5 tbsp butter
  • 5 oz dark chocolate
  • ½ cup cold milk

Instructions:
Melt butter, chocolate, and powdered sugar over low heat, stirring until smooth. Remove from heat and add milk. Stir in biscuits and nuts until evenly coated.

Place mixture on parchment paper and shape into a log. Roll tightly, wrap, and refrigerate until firm. Slice before serving and dust with powdered sugar if desired.
