Elderflower syrup is a classic homemade drink, perfect for refreshing beverages, cocktails, or even desserts. This version has been tested and refined to create the best flavor and aroma.

Ingredients:

10 large elderflower clusters

4 cups water

2 ¼ cups (1–1.5 pounds) sugar

2 teaspoons citric acid

1 lemon (half thinly sliced, half juiced and zested)

Directions:

Submerge the elderflower clusters in water and let them steep for 24 hours.

Remove the flowers and strain the liquid through a fine sieve or cheesecloth.

Add sugar, citric acid, lemon slices, juice, and zest. Stir occasionally until the sugar dissolves completely, about 24 hours.

Pour the syrup into prepared clean bottles and seal. Store in the refrigerator.

Tips:

Adjust the amount of elderflowers for a stronger flavor; doubling the flowers gives a richer, more fragrant syrup.

This syrup is delicious diluted with cold water, sparkling water, or used in cocktails.
