- 1 small yellow onion, finely chopped
- 1 medium potato, diced
- 2 medium carrots, sliced into thin rounds or matchsticks
- 1/4 head cauliflower, broken into small florets
- 1/4 head broccoli, broken into small florets
- 2 tablespoons vegetable oil
- 3 large cups (about 24 fl oz) water
- Seasoned salt or vegetable bouillon to taste
Instructions:
Heat the oil in a medium saucepan over medium heat. Sauté the chopped onion until softened. Add the sliced carrots and diced potato. Season to taste with seasoned salt or a veggie bouillon mix. Pour in the water and bring almost to a boil. Reduce heat to low and simmer for about 20 minutes.
