Here is another nice recipe: Easy Vegan Shepherd’s Pie. Ingredients:

oil (cold-pressed olive),
2 medium onions,
2 cloves of garlic,
1 tablespoon curry powder,
2 cans of tomatoes (pieces or whole, not paste),
3 salt of cauliflower torn into flowers,
3 and a half tablespoons of broccoli (also in flowers),
2 medium sargareps,
1 parsnip,
2 spoons of medium hot pepper sauce

Mashed potatoes/dressing:
1.2 kilograms of potatoes (6 pieces of medium size),
2 spoons of cream,
20 grams of butter.

Heat the oil in a saucepan and fry the garlic and onion, stirring, until the onion is soft. Add the curry and mix until the onion absorbs the flavor (15-20 seconds). Add 2 cans of tomatoes with all the juice they were in, and the rest of the ingredients. Cook for 15 minutes until the vegetables are soft. Let it stand for 10 minutes. Pour into an ovenproof dish and pour over the prepared mashed potatoes. Bake in the oven at medium temperature for 25 minutes.
