Ingredients

Chocolate Cake Base

  • 3 large eggs
  • ¾ cup brown sugar
  • ½ cup whole milk
  • ⅓ cup melted coconut oil
  • ½ teaspoon orange zest
  • ¼ cup cocoa powder
  • 1½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt

Almond Praline Crunch

  • 1 cup slivered almonds
  • 3 tablespoons honey
  • 2 tablespoons unsalted butter
  • 1 teaspoon cinnamon

Orange Blossom Chocolate Ganache

  • 8 oz dark chocolate (chopped)
  • ½ cup heavy cream
  • 1 teaspoon orange blossom water

Instructions

1. Chocolate Cake Base

  1. Preheat oven to 350°F (175°C). Grease an 8-inch round cake pan and line with parchment.
  2. In a large bowl, whisk the eggs with brown sugar until light and fluffy. Add milk, coconut oil, and orange zest, mixing until smooth.
  3. In a separate bowl, sift together flour, cocoa, baking powder, baking soda, and salt. Gradually fold the dry ingredients into the wet mixture until fully incorporated.
  4. Pour the batter into the prepared pan and bake for 25–30 minutes, or until a toothpick comes out clean. Let the cake cool completely.

2. Almond Praline Crunch

  1. In a small pan over medium heat, melt butter and honey together.
  2. Add slivered almonds and cinnamon, stirring constantly until the almonds are golden brown and coated in a sticky, shiny glaze.
  3. Spread over a parchment-lined tray to cool. Once set, chop coarsely and sprinkle over the cake base.

3. Orange Blossom Chocolate Ganache

  1. Heat heavy cream until just simmering. Pour over chopped dark chocolate in a bowl.
  2. Add orange blossom water and stir until smooth and glossy. Let cool slightly.
  3. Pour over the cake and spread evenly, allowing some ganache to drip down the sides for an elegant finish.

4. Decoration

  • Garnish with toasted almonds, fresh raspberries, or small edible gold leaf pieces. Serve chilled or at room temperature.

  • Use high-quality dark chocolate for richer flavor.
  • The almond praline can be made ahead and stored in an airtight container for up to 3 days.
  • Orange blossom water is subtle; start with 1 tsp and adjust to taste.
  • Let the ganache set for at least 1 hour in the fridge for clean slices.
