When you want to make something different yet simple, dried sour cherry bars are an excellent choice. These bars offer a unique twist with the tangy flavor of dried sour cherries or cranberries, perfectly complemented by a buttery, soft texture.

Ingredients:

  • 1 cup (250 mL) butter, softened
  • 1 1/2 cups (375 mL) lightly packed brown sugar
  • 2 large eggs
  • 1 1/2 tsp (7 mL) vanilla extract
  • 2 cups (500 mL) all-purpose flour
  • 1/2 tsp (2 mL) salt
  • 1 cup (250 mL) dried sour cherries or cranberries

Instructions:

  1. Preheat the oven to 350°F (180°C). Butter a 9-inch (23 cm) square pan or a 7 x 11-inch (2 L) rectangular baking pan.
  2. In a large bowl, beat the butter with brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, mix the flour and salt with a fork. Add the dried sour cherries or cranberries and toss to coat. Gradually add the dry mixture to the butter mixture in two additions, stirring until combined. Spread the batter evenly into the prepared pan.
  4. Bake in the center of the oven for 30–35 minutes, or until the edges pull away from the sides of the pan while the center remains slightly moist. Cool on a wire rack before cutting into squares.

Yield: 24 bars
