Try this easy and flavorful zucchini sauce with aromatic spices. Perfect over rice, pasta, or mashed potatoes for a healthy, comforting meal.
Ingredients (Serves 3–4):
- 3 small zucchini (about 1 lb), cubed or grated
- 1 small onion, finely chopped
- 1 tablespoon tomato paste
- 1/2 teaspoon sugar
- 1/2 teaspoon salt, or to taste
- 2 tablespoons all-purpose flour
- 1/4 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 1 teaspoon chopped fresh dill (optional)
- 3/4 cup water or vegetable broth
- 1 small chili pepper, chopped (optional)
- 1 tablespoon olive oil
Instructions:
- Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until soft and translucent.
- Stir in the sugar to help caramelize the onions. Add the zucchini cubes or grated zucchini and cook for 3–4 minutes, stirring occasionally.
- Sprinkle the flour over the zucchini and stir well to combine. Gradually add water or vegetable broth while stirring to create a smooth sauce.
- Add cumin, black pepper, dill, and optional chili pepper. Stir and simmer on low heat for 15–20 minutes, until zucchini is tender and the sauce has thickened.
- Adjust seasoning with additional salt or pepper if needed. Serve warm over rice, pasta, or mashed potatoes.
