Try this easy and flavorful zucchini sauce with aromatic spices. Perfect over rice, pasta, or mashed potatoes for a healthy, comforting meal.

Ingredients (Serves 3–4):

  • 3 small zucchini (about 1 lb), cubed or grated
  • 1 small onion, finely chopped
  • 1 tablespoon tomato paste
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt, or to taste
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1 teaspoon chopped fresh dill (optional)
  • 3/4 cup water or vegetable broth
  • 1 small chili pepper, chopped (optional)
  • 1 tablespoon olive oil

Instructions:

  1. Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until soft and translucent.
  2. Stir in the sugar to help caramelize the onions. Add the zucchini cubes or grated zucchini and cook for 3–4 minutes, stirring occasionally.
  3. Sprinkle the flour over the zucchini and stir well to combine. Gradually add water or vegetable broth while stirring to create a smooth sauce.
  4. Add cumin, black pepper, dill, and optional chili pepper. Stir and simmer on low heat for 15–20 minutes, until zucchini is tender and the sauce has thickened.
  5. Adjust seasoning with additional salt or pepper if needed. Serve warm over rice, pasta, or mashed potatoes.
