- 2 medium potatoes, peeled and diced small
- 2 medium carrots, peeled and diced small
- 2 medium beets, peeled and diced small
- ½ cup green peas, fresh or frozen
- ½ small red onion, finely minced
- ¼ cup fresh parsley, chopped
- 1 small Granny Smith apple, peeled and diced (optional)
- ¾ cup mayonnaise
- ¼ cup low-fat sour cream
- 2 tablespoons plain Greek yogurt
- 1 teaspoon sea salt
- ½ teaspoon black pepper
- ½ cup pomegranate seeds for garnish
INSTRUCTIONS
Bring separate pots of salted water to boil. Cook potatoes, carrots, and beets individually until just tender, about 12-15 minutes each. Cook peas 3 minutes if fresh, 5 if frozen. Drain each vegetable thoroughly. Spread on kitchen towels to remove all moisture.
In small bowl, whisk mayonnaise, sour cream, and yogurt until smooth.
Line oval or square dish with plastic wrap, extending over sides for easy removal.
Begin layering: spread potatoes evenly across bottom. Press gently. Spread thin layer of dressing. Add carrots, press, then dressing. Continue with beets, peas, and optional apple, spreading dressing between each layer. Finish with beets on top for crimson surface.
Season between layers with salt and pepper. Taste as you build.
Cover tightly with plastic wrap. Refrigerate overnight minimum, preferably 24 hours.
