These gingerbread cookies are absolutely amazing! Here’s my take on the recipe:
- 1 pack of margarine (I use the creamy blue-pack variety)
- 250g of honey (about 1/4 of a jar)
- 1 tablespoon of brown sugar
- 1 tablespoon of cinnamon
Start by mixing everything together with a fork in a large bowl until well combined. Once it’s smooth, I add flour—half all-purpose and half bread flour, so they stay soft and don’t become too hard.
I don’t measure the flour exactly, but you’ll need a good amount—enough so that the dough doesn’t stick to your hands.
Once the dough is ready, roll it into small balls and flatten them out. In the center of each cookie, I press a chocolate drop (the kind used for cookies) or an almond.
This recipe makes a good batch, so you’ll have plenty to enjoy!
Happy baking and enjoy!
