Move over, basic cookies — these Day and Night Jam Cookies bring buttery richness and a burst of fruity jam to the table. A classic homemade treat that’s as pretty as it is delicious, perfect for afternoon tea or a sweet snack with coffee. If you love buttery, melt-in-your-mouth cookies paired with your favorite jam, this recipe is your new go-to.

Ingredients:

  • ½ cup (4 oz) margarine or oil
  • 3 cups all-purpose flour (about 13 oz)
  • ½ cup granulated sugar (4 oz)
  • 3 egg yolks
  • 1 packet baking powder (about 2 tsp)
  • About ½ to 1 cup sour cream (start with ½ cup and add as needed)
  • Zest of 1 lemon
  • Your favorite jam (apricot, sour cherry, raspberry, etc.)

Instructions:
Mix margarine or oil, sugar, egg yolks, baking powder, lemon zest, and sour cream gradually with the flour. Knead the dough until smooth but not too soft. Roll the dough out to about ¼ inch thickness. Use a round cookie cutter to cut out circles and a star-shaped cutter with a small hole in the center to cut stars. Make sure you have an equal number of circles and stars for sandwiching. Bake cookies at 350°F (175°C) until the edges just start to turn golden, about 10-12 minutes. Let cool. Spread jam on the round cookies and top with the star cookies, aligning the holes so the jam peeks through. Optional: dust with powdered sugar or leave as is for an elegant look.
