Ingredients

  • 2 cups plain Greek yogurt
  • 4 small cucumbers, peeled and thinly sliced
  • 1 garlic clove, finely minced
  • ¾ teaspoon salt (adjust to taste)
  • ½ teaspoon dried mint
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil (optional, for extra creaminess)
  • Fresh mint leaves for garnish (optional)

Directions

In a large bowl, combine the yogurt, salt, garlic, lemon juice, and olive oil. Mix until smooth. Add the sliced cucumbers and dried mint, stirring gently to coat the cucumbers evenly. Chill in the refrigerator for about 20 minutes before serving. Garnish with fresh mint leaves if desired.
