Crispy Tomato and Basil Toasts are a quick and flavorful appetizer. Warm, crunchy bread topped with fresh tomatoes, Parmesan, and fragrant basil makes every bite irresistible—perfect for summer gatherings or a light bite anytime.
Ingredients:
- 4 slices of medium white or whole wheat bread
- 4 medium tomatoes or 12 cherry tomatoes
- 1/4 cup grated Parmesan cheese
- 2 tablespoons extra virgin olive oil, plus more for drizzling
- 4 cloves garlic
- Fresh basil leaves (or 1 teaspoon dried basil)
- Salt and black pepper, to taste
- Optional toppings: prosciutto, marinated anchovy fillets, olives
Instructions:
- If using fresh basil, slice the leaves into thin strips. If using dried, have it ready to sprinkle.
- Dice the tomatoes into small cubes, drizzle with 1 teaspoon olive oil, and season lightly with salt.
- Toast the bread slices in a preheated oven at 425°F (220°C) for a few minutes or use a toaster until crisp.
- While the bread is hot, peel the garlic cloves and gently rub them over the toasted surface. Drizzle or brush lightly with olive oil, then season with salt and pepper.
- Top each slice with the prepared tomatoes and sprinkle with thin shavings or grated Parmesan. Add basil on top.
- Serve immediately while warm and crispy.
