Crepes with Cheese and Ham are easy to make and always delicious. You can change the filling to suit your taste, like adding spinach, mushrooms, or chicken. They’re perfect for breakfast, lunch, or dinner.

Ingredients:

For the Filling:

  • 1 1/4 cups fresh ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup grated sharp cheddar cheese
  • 7 oz deli ham, chopped
  • 2 boiled eggs, finely chopped
  • 2 tablespoons mayonnaise
  • Salt to taste
  • 1/4 cup grated mozzarella (optional for extra creaminess)

For the Crepes:

  • 2 cups all-purpose flour
  • 2 large eggs
  • 1/2 cup sparkling water (for a lighter texture)
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 2 tablespoons oil or melted butter for frying

Instructions:

  1. In a bowl, combine the flour, eggs, sparkling water, milk, and salt. Whisk until smooth. Allow the batter to rest for about 20 minutes.
  2. For the filling, mash the ricotta cheese and add the chopped ham, grated cheddar, Parmesan, boiled eggs, and mayonnaise. Mix well. Adjust seasoning with salt to taste. Optionally, stir in mozzarella cheese for added creaminess.
  3. Heat a non-stick skillet over medium heat and lightly grease with oil or melted butter. Pour in a small amount of batter and cook each crepe for 2-3 minutes per side until golden. Remove and set aside.
  4. Once all crepes are cooked, spoon the cheese and ham mixture into each crepe, roll them up tightly, and place in a lightly greased baking dish.
  5. Optionally, sprinkle extra Parmesan cheese on top and bake at 350°F (175°C) for 10-15 minutes until the filling is hot and cheese is melted.
  6. Serve the savory crepes warm, with a side of fresh greens or a light salad.
