Cake Base

  • ¾ cup granulated sugar
  • ⅔ cup cornstarch
  • 2 teaspoons vanilla extract
  • 1 cup unsalted butter, softened
  • (optional 2 tablespoons heavy cream for extra silkiness)

Chocolate Glaze

  • 5 oz semi-sweet chocolate
  • 3 tablespoons neutral oil (sunflower or vegetable)
  • (optional 1 tablespoon butter for shine)

Preparation

Cake Base

Mix flour, cocoa powder, baking powder, and salt. Beat egg whites with sugar until stiff peaks form. Add egg yolks one at a time, gently mixing. Fold in dry ingredients carefully. Pour into a parchment-lined 9×13-inch baking pan. Bake at 350°F for about 15 minutes. Let cool.

Syrup

Boil sugar and water for about 10 minutes. Pour warm syrup evenly over the cooled cake base. Pierce lightly with a fork so it absorbs fully.

Vanilla Cream

Whisk cornstarch with a small amount of milk until smooth. Heat remaining milk with sugar until just boiling. Add cornstarch mixture and cook, stirring, until thick. Remove from heat, cover with plastic wrap touching the surface, and cool completely. Beat with softened butter and vanilla until smooth and fluffy. Spread evenly over the cake.

Glaze

Melt chocolate with oil (and butter if using) over low heat. Pour over the cream layer. Chill until fully set, then cut into neat squares.
