Cook Time: 30 minutes
Total Time: 50 minutes
Ingredients:
- 2.2 lbs (1 kg) potatoes, boiled in skins, then peeled and sliced
- 5–6 hard-boiled eggs, sliced
- 6–8 oz assorted cured meats (ham, smoked sausage, prosciutto, salami—use what you have)
- 1 cup heavy cream
- 1/2 cup sour cream
- 1 large egg
- 1/2 cup grated Parmesan
- 1/2 cup shredded mozzarella or pizza blend cheese
- Butter or oil for greasing
- Salt and pepper, to taste
Instructions:
- Boil & Prep:
Boil the potatoes in their skins until tender, then peel and slice into thin rounds. Also boil the eggs and slice. - Layer:
Grease a baking dish with butter or oil. Layer sliced potatoes, eggs, and assorted meats. Repeat layers, finishing with a layer of potatoes on top (so it looks humble, in case the neighbors stop by). - Creamy Top:
Pour heavy cream evenly over the entire dish. In a separate bowl, mix sour cream with one beaten egg. Spread over the top. - Cheese It:
Sprinkle the top with Parmesan and shredded mozzarella. - Bake:
Bake in a preheated oven at 400°F (200°C) for about 30 minutes, or until the top is golden and crisp. - Serve:
Serve hot, ideally with a glass of chilled dry white wine.
