Ingredients
For the Cake
- 8 large eggs, separated
- 1⅓ cups granulated sugar
- Juice of 2 lemons
- Zest of 2 lemons
- 1 cup blanched almonds, finely ground
- 1 cup all-purpose flour
- 1 teaspoon vanilla extract
- Butter and flour for preparing the cake pan
For the Lemon Cream Filling
- 3 large egg yolks
- ½ cup granulated sugar
- ⅓ cup whole milk
- 1 teaspoon all-purpose flour
- 7 tablespoons unsalted butter, softened

- ¾ cup heavy whipping cream, whipped until stiff
For the Glaze
- 1½ cups powdered sugar
- 2–3 tablespoons fresh lemon juice
Instructions
- Preheat the oven to 350°F. Grease and lightly flour a 9-inch round cake pan.
- Beat the egg whites until stiff peaks form.
- In another bowl, beat the egg yolks with the granulated sugar until pale and fluffy. Mix in the lemon juice, lemon zest, and vanilla extract.
- Fold in the ground almonds and flour until combined. Gently fold the whipped egg whites into the batter, keeping as much air as possible.
- Pour the batter into the prepared pan and bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely before slicing it horizontally into three even layers.
Prepare the Filling
- In a saucepan, whisk together the egg yolks, sugar, milk, and flour.
- Cook over medium-low heat, stirring constantly, until the mixture thickens into a smooth custard.
- Remove from the heat and allow it to cool completely.
- Beat in the softened butter until smooth and creamy, or fold in the whipped heavy cream for a lighter filling.
Assemble the Cake
Spread the lemon cream evenly between each cake layer.
Make the Glaze
Whisk the powdered sugar with the lemon juice until smooth. Pour the glaze over the top of the cake, allowing it to gently drip down the sides.
