A hearty and healthy breakfast option, soft on the inside with a light golden crust.
Ingredients (serves 3–4):
- 1 3/4 cups all-purpose flour
- 1/3 cup almond flour
- 1/4 cup sugar or maple syrup
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups almond milk
- 2 Tbsp coconut oil
- 1/2 cup crumbled soft tofu
Instructions:
In a bowl, whisk together flours, sugar, baking powder, baking soda, and salt.
In another bowl, mix almond milk and coconut oil. Add the wet mixture to the dry ingredients, stirring gently until just combined; the batter should remain slightly lumpy.
Fold in crumbled tofu carefully. Let the batter rest for 5 minutes.
Heat a non-stick pan over medium heat and lightly grease. Pour small portions of batter and cook for 2–3 minutes on each side until golden.
Serve warm with maple syrup, fresh fruit, or applesauce.
