Chopped Herring ingredients:

2 pickled herring filets,

2 1/2 tbsp. white vinegar,

1 large Granny Smith apple,

2 slices white bread,

2 hard boiled eggs,

1 small onion,

Salt and pepper to taste,

1 tsp. sugar optional.

Cut herring into small pieces (remove skin and bones).

Soak bread in vinegar and then cut into pieces.

Chop herring and bread finely in a wooden or metal bowl.

Peel and core apple and cut into small pieces.

Dice onion finely and add to apples.

Chop eggs, salt and pepper and add to apple/onion mixture.

Combine all ingredients and chop until smooth, but not paste-like.

Add sugar slowly, to taste, if too tart.

Refrigerate.
