Ingredients

For the Mousse:

  • 10.5 oz (300g) orange-flavored chocolate (or 5.25 oz dark chocolate + 5.25 oz milk chocolate)
  • ¾ cup (180ml) heavy whipping cream
  • 1 tablespoon powdered sugar
  • 2 tablespoons dark rum
  • 3 large eggs, separated (yolks and whites)
  • Pinch of salt

For the Orange Syrup Topping:

  • 2 oranges, sliced
  • Juice of 1 orange (about ¼ cup)
  • 2 tablespoons granulated sugar
  • ½ teaspoon vanilla sugar

Instructions

Make the Mousse Base

  1. Melt the chocolate: Set up a double boiler by placing a heatproof bowl over a saucepan of simmering water (don’t let the bowl touch the water). Add the chocolate and stir occasionally until completely melted and smooth. Remove from heat.
  2. Add flavorings: Whisk in the powdered sugar, rum, and egg yolks until well combined. The mixture should be glossy and smooth.

Whip the Cream and Egg Whites

  1. Whip the cream: In a clean bowl, beat the heavy cream until stiff peaks form. Set aside.
  2. Whip the egg whites: In another clean bowl (make sure it’s completely dry), beat the egg whites with a pinch of salt until stiff, glossy peaks form.

Fold Together

  1. Lighten the chocolate: Gently fold about one-third of the whipped cream into the chocolate mixture to loosen it.
  2. Fold in remaining cream: Add the rest of the whipped cream and fold until just combined — don’t overmix.
  3. Fold in egg whites: Gently fold in the whipped egg whites in two additions, using a light hand to maintain the airy texture. Stop as soon as no white streaks remain.

Chill

  1. Portion and chill: Divide the mousse among glasses or ramekins. Refrigerate for at least 4 hours, preferably overnight, until set.

Optional Orange Syrup Topping

  1. Make the syrup: In a small saucepan, combine orange juice and sugar. Heat gently over medium-low heat for about 2 minutes until slightly thickened into a light syrup. Add vanilla sugar if desired.
  2. Garnish: Arrange orange slices on top of set mousse and drizzle with the warm syrup.

 Chef’s Tips

  • Chocolate choice: For best results, use a combination of dark and milk chocolate (50/50) rather than pre-flavored orange chocolate. This gives you control over the sweetness level.
  • Room temperature eggs: Separate eggs when cold, but let whites come to room temperature for maximum volume when whipping.
  • Clean equipment: Ensure bowls and beaters are completely grease-free when whipping egg whites — any fat will prevent them from reaching stiff peaks.
  • Make ahead: This mousse keeps beautifully in the refrigerator for up to 3 days. Add fresh garnishes just before serving.
