Ingredients

For the Cake:

  • 9 oz (250 g) cooking chocolate, chopped
  • 9 oz (250 g) butter + 0.5 oz (15 g) for the pan
  • 1 cup powdered sugar (about 7 oz / 200 g)
  • 4 large eggs
  • 1/2 cup + 1 tablespoon all-purpose flour (about 2.5 oz / 70 g)
  • Optional: 1 teaspoon vanilla extract or 1/2 teaspoon espresso powder to enhance chocolate flavor

For the Glaze:

  • 9 oz (250 g) cooking chocolate, chopped
  • 3.5 oz (100 g) butter
  • 1/2 cup heavy cream (about 5 fl oz / 150 ml)

Instructions

  1. A few hours before baking, remove eggs from the refrigerator and let them come to room temperature. Also, leave the butter out to soften. Preheat oven to 350°F (180°C). Grease a cake pan and dust lightly with flour.
  2. Melt the chocolate in a double boiler until smooth, then let it cool slightly.
  3. In a large bowl, beat softened butter and powdered sugar until creamy. Add eggs one at a time, mixing continuously, then gradually fold in the melted chocolate.
  4. Finally, gently fold in flour until just combined. Optional: fold in a teaspoon of vanilla extract or espresso powder for added depth.
  5. Pour batter into the prepared cake pan and bake 30–35 minutes or until a toothpick inserted in the center comes out mostly clean. Allow cake to cool in the pan for 10 minutes, then carefully remove.
  6. While the cake cools, prepare the glaze: melt chocolate and butter together over a double boiler, then stir in heavy cream until smooth. Pour over the cooled cake. Spread evenly with a spatula. Optional: sprinkle chopped nuts or chocolate shavings for garnish.
