A bit spicy, irresistibly fragrant, and full of flavor – Chinese-style chicken with Peanuts must-try!

Ingredients:

  • 4.5 oz (125 g) chicken breast, diced
  • 1 small cucumber, diced
  • 1 oz (about 2 tbsp) raw, shelled peanuts
  • 1 egg white
  • Salt, to taste
  • 1 tsp white wine
  • 2 tbsp cornstarch
  • Oil (vegetable or peanut oil recommended)
  • Sugar, to taste
  • Soy sauce, to taste
  • Chili sauce or spicy ketchup, to taste
  • A few slices of leek (or green onion)
  • Water, as needed
Instructions:
  1. Prep Ingredients:
    Dice the chicken breast and cucumber.
    In a dry skillet or pan, lightly toast the peanuts until golden and aromatic. Set aside.

  2. Marinate the Chicken:
    In a bowl, mix the diced chicken with salt, egg white, and half of the cornstarch dissolved in a bit of cold water. Stir until well combined.

  3. Make the Sauce:
    In another bowl, mix a little water, the remaining cornstarch (also dissolved in a small amount of cold water), a pinch of salt, white wine, soy sauce, and sliced leek.

  4. Cook the Chicken:
    Heat a wok or large skillet with oil until very hot.
    Add the chicken and stir-fry briefly, just until it’s cooked through.
    Remove the chicken and drain any excess oil.

  5. Cook the Vegetables:
    In the same pan, add a little more oil and stir-fry the diced cucumber for a short time.
    Return the cooked chicken to the pan and stir gently to combine.

  6. Add Peanuts & Finish:
    Add the toasted peanuts and stir-fry everything together for about 30 seconds.
    Just before serving, drizzle with chili sauce or spicy ketchup to taste.

Optional:

You can also make this dish using lean pork or veal instead of chicken.
