There’s nothing quite like a bowl of homemade chicken soup. This old-fashioned recipe uses just a few pieces of chicken, plenty of vegetables, and slow simmering to bring out the deep, comforting flavor. Perfect for cozy family meals or when you need something warm and nourishing.

Ingredients:

2–3 pieces of chicken (such as drumsticks, thighs, or wings)
12 cups water (enough to cover the chicken)
3 carrots, peeled and sliced
3 celery stalks, sliced
2 small onions, peeled and halved
2 small parsnips, peeled and sliced
Salt and pepper, to taste
1 teaspoon chicken soup powder or bouillon (optional)

Instructions:

  1. Place the chicken pieces in a large soup pot and cover with water.
  2. Bring to a boil and cook for 15–20 minutes, skimming off any foam that rises to the top.
  3. Add the carrots, celery, onions, parsnips, and seasoning.
  4. Reduce the heat to medium-low and simmer gently for about 1 ½ hours, uncovered, until the broth is flavorful and the vegetables are tender.
  5. Strain the soup, discard the bones and skin, then return the cut-up vegetables and chicken meat to the broth.

Serve hot with fresh bread or noodles.
