Here is a delicious Chicken and Rice Soup recipe, which is easy to prepare:

Chicken and Rice Soup recipe Ingredients:
1 cup rice (white or brown),
2 tablespoons olive oil or butter,
1 medium onion, chopped,
2 carrots, peeled and chopped,
2 celery stalks, chopped,
3 garlic cloves, minced,
8 cups chicken broth (homemade),
2 chicken breasts (boneless and skinless) or thighs,
1 bay leaf,
1 teaspoon dried thyme (or 2-3 sprigs fresh thyme),
Salt and pepper to taste,
2 tablespoons fresh parsley, chopped (optional),
Juice of 1 lemon (optional, for added freshness).


Preparation:
In a small saucepan, bring 2 cups of water and a pinch of salt to a boil.
Add 1 cup of rice and reduce the heat to low.
Cover and simmer until the rice is cooked and the water is absorbed, about 15-18 minutes for white rice or 35-40 minutes for brown rice. Set aside.
Sauté Vegetables:

In a large soup pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat.
Add the chopped onion, carrots, and celery, and sauté for about 5-7 minutes, or until the vegetables start to soften.
Stir in the minced garlic and cook for another minute until fragrant.
Add the Chicken and Broth:

Pour in 8 cups of chicken broth, and add the bay leaf and thyme. Stir well.
Place the chicken breasts or thighs into the pot.
Season the soup with salt and pepper to taste.
Bring the soup to a boil, then reduce the heat to low and cover. Let it simmer for about 20 minutes, or until the chicken is fully cooked through (the internal temperature should reach 165°F/75°C).
Once the chicken is cooked, remove it from the pot and place it on a cutting board.
Use two forks to shred the chicken into bite-sized pieces, then return the shredded chicken to the soup.
Add the cooked rice to the soup pot and stir everything together. Let the soup simmer for an additional 5 minutes, allowing the flavors to blend.
Taste the soup and adjust seasoning if needed, adding more salt, pepper, or thyme as desired.
If you like, add fresh parsley and a squeeze of lemon juice for brightness.
Serve:Ladle the hot soup into bowls and garnish with extra parsley, if desired. Serve with a slice of crusty bread or crackers on the side.
Tips:
If you’re using pre-cooked chicken, skip the step of simmering the raw chicken. Add the shredded cooked chicken when you add the rice, and let it heat through.
This soup is great for leftovers, but the rice may absorb more broth as it sits. If it becomes too thick, you can add a little more broth or water when reheating.
Feel free to add other vegetables like spinach, peas, or zucchini for extra nutrition.
