Tender chicken cubes and savory vegetables come together in this flavorful skewer recipe, perfect for grilling or roasting.

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 4 slices of bacon, cut into 1-inch pieces
  • 1 large onion, cut into 1-inch pieces
  • 1 cup cherry tomatoes
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1 teaspoon honey
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ground cumin
  • Optional: asparagus spears or zucchini slices for additional skewers

Instructions:

  1. Prepare the marinade by mixing olive oil, lemon juice, salt, honey, turmeric, and cumin in a bowl. Add the chicken cubes, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or overnight for deeper flavor.
  2. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  3. Thread the chicken cubes onto the skewers, alternating with bacon pieces, onion chunks, and cherry tomatoes. For added variety, include optional asparagus or zucchini slices.
  4. Preheat a grill or grill pan to medium-high heat. Lightly oil the grates or pan to prevent sticking.
  5. Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and lightly charred on all sides.

Tips:

  • For a different protein option, substitute chicken with turkey thighs, pork loin, or even tofu.
  • Vegetables like bell peppers or mushrooms can be added for more variety.
  • Remove the skewers from the refrigerator about 30 minutes before grilling to bring them to room temperature.
