This bread takes rye in a new direction — dark, fragrant, and slightly sweet. Brewed coffee deepens the flavor, while orange zest brightens the loaf. Perfect with butter or cheese.
Ingredients
- 1 cup strong brewed coffee, cooled to warm
- ½ cup orange juice
- 1 tablespoon orange zest
- 2 tablespoons olive oil
- 3 tablespoons brown sugar
- 1 teaspoon salt
- 2 cups rye flour
- 1 ½ cups all-purpose flour
- ½ cup rolled oats
- 2 teaspoons instant yeast
- ¼ cup chopped walnuts (optional)
Directions
- In a large bowl, combine coffee, orange juice, zest, olive oil, and brown sugar.
- Stir in rye flour, oats, and salt. Mix in yeast and all-purpose flour gradually until a dough forms.
- Knead until smooth (8–10 minutes). Add walnuts if using.
- Place dough in a greased bowl, cover, and let rise until doubled (1–1.5 hours).
- Shape into a round loaf, place on parchment-lined pan, and let rise 40 minutes.
- Bake at 375°F (190°C) for 35–40 minutes.
- Cool fully before slicing.
