This bread takes rye in a new direction — dark, fragrant, and slightly sweet. Brewed coffee deepens the flavor, while orange zest brightens the loaf. Perfect with butter or cheese.

Ingredients

  • 1 cup strong brewed coffee, cooled to warm
  • ½ cup orange juice
  • 1 tablespoon orange zest
  • 2 tablespoons olive oil
  • 3 tablespoons brown sugar
  • 1 teaspoon salt
  • 2 cups rye flour
  • 1 ½ cups all-purpose flour
  • ½ cup rolled oats
  • 2 teaspoons instant yeast
  • ¼ cup chopped walnuts (optional)

Directions

  1. In a large bowl, combine coffee, orange juice, zest, olive oil, and brown sugar.
  2. Stir in rye flour, oats, and salt. Mix in yeast and all-purpose flour gradually until a dough forms.
  3. Knead until smooth (8–10 minutes). Add walnuts if using.
  4. Place dough in a greased bowl, cover, and let rise until doubled (1–1.5 hours).
  5. Shape into a round loaf, place on parchment-lined pan, and let rise 40 minutes.
  6. Bake at 375°F (190°C) for 35–40 minutes.
  7. Cool fully before slicing.
