Crispy on the outside, soft and flavorful on the inside – Börek is a savory pastry loved across the Mediterranean and Middle East. This version combines tender spinach, caramelized onion, and tangy blue cheese, all wrapped in a golden, flaky crust you make from scratch. Perfect for brunch, parties, or simply when you crave something truly special.
Ingredients
For the Dough:
- 2 large eggs (reserve 1 yolk for brushing)
- 1 teaspoon salt
- 1/3 cup olive oil (plus 1 tablespoon for brushing)
- 2/3 cup whole milk
- 1 1/2 teaspoons baking powder
- About 4 cups all-purpose flour (add gradually until dough is soft)
For the Filling:
- 1 (5–6 oz) bag baby spinach, chopped
- 1 large onion, finely diced
- 2–3 tablespoons olive oil
- Salt and black pepper, to taste
- 4 oz cheese, crumbled
Lightly grease a 10-inch round cake pan with olive oil. Preheat oven to 350°F (175°C).
Heat olive oil in a skillet over medium heat. Cook onion until golden, about 5–6 minutes. Add chopped spinach and cook until just wilted. Season with salt and pepper. Remove from heat and stir in cheese.
In a large bowl, whisk eggs (save one yolk for brushing), olive oil, milk, salt, and baking powder. Add 1 cup of flour and mix. Gradually add remaining flour, kneading until dough is soft and no longer sticky.
Lightly flour your work surface. Divide dough into small balls and roll each into an 8-inch circle. Spoon 2–3 tablespoons of filling on one side and roll tightly. Shape into a ring and place in the center of the pan. Continue wrapping rolls around the center until the pan is filled.
Mix reserved egg yolk with 1 tablespoon olive oil and brush over the top. Bake for 35–40 minutes or until golden brown. Let rest a few minutes before slicing and serving warm.
